Michelin Star Chef Ollie Dabbous to Host Pop Up at The Feathered Nest

Leading Cotswolds gourmet bolthole, The Feathered Nest, has announced a partnership with Michelin star chef, Ollie Dabbous of Hide. The acclaimed chef will be hosting a bespoke pop up at the restaurant with rooms in Nether Westcote on the 27 March, which will include six course tasting menu and wine pairing from Hedonism Wine.

The Feathered Nest recently appointed Rene Pinedo as their new Head Chef. The talented chef previously worked with Ollie Dabbous at his eponymous debut restaurant Dabbous and at the renowned Le Manoir aux Quat'Saisons.

Ollie’s Hide tasting menu will start with a canape, paired with Rathfinny Estate Classic Cuvèe, followed by Beetroot Tartlet with This Morning’s Ricotta warm spices and marigold. This will be served with Albarino Foudre Angel Sequeiros, Rias Baixas from Spain.

Next on the menu is Slow Cooked Crispy Pork Belly, cabbage roulette season with kimchi and pancetta paired with Primitivo Di Manduria Riserva Attanasiom.

A fish course of Grilled Lobster with Toasted Peppercorns, pickled rose petals and pandan leaf broth is paired with Frogs Leap Shale and Stone Chardonnay, California.

For the meat course Venison Saddle cooked on The Konro, white chocolate parsnip purée, Jerusalem artichoke, cavalonero and pearl barley will be served with Château Langoa-Barton 3ème Grand Cru Classé, Saint-Julien, Bordeaux.

The final courses will include Olive Oil Panna Cotta with Blood Orange and to finish a Popcorn and Caramel Religieuse served with Dessert Cocktail.

Ollie commented: “I remember Rene Pinedo from my first restaurant, Dabbous, many years ago: such a lovely bloke, both extremely passionate and humble. I am thrilled to see him now as Head Chef of The Feathered Nest and can’t wait to go to his kitchen to cook my dishes alongside his, all served with some amazing wines from Hedonism.”

Rene said: “Ollie has always been such a big inspiration and I am grateful for the opportunity and knowledge he imparted when I was at Dabbous. I am delighted that my former mentor is now joining me in my own kitchen and can’t wait to serve this collaborative menu.”

Earlier this year, Little Clarendon Street was named one of the coolest places in the UK. The glowing report cited shops like Wild Honey and The Jericho Cheese Company, as well as community hub, Common Ground, and the now departed Wilding restaurant. Happily this prime venue has not stayed vacant for long. Kibou, the Japanese Kitchen and Bar, has opened its latest outpost in Jericho, and I went along to try out their contemporary and very stylish take on Japanese classics and street food.
