Cotswolds gourmet bolthole, The Feathered Nest Inn, has appointed Renemar Pinedo as their new Head Chef.

Rene, who is originally from the Caribbean Island of Curaçao, started his career at the esteemed Restaurant Rozemarijn in Holland before moving to the UK and working at leading venues such as Le Manoir aux Quat'Saisons and Dabbous.

He then joined the kitchen at the 3 AA Rosette Feathered Nest and is now making the step up to Head Chef with a new approach to the menu and taking inspiration from his Caribbean routes with a focus fresh seafood and open grill cooking.

Rene’s new menu, which has been constructed to be enjoyed sharing-style, features signature dishes such as grilled Lobster tail, spiced barbecued Octopus, and roasted Monkfish. Rene was also keen to embrace traditional country pub cuisine, creating his own take on the classics such as Fish & Chips, The Nest Burger as well as, a broad selection of grass fed, dry-aged prime beef cuts cooked on the Josper.

He commented: “Food is my passion and from a young age I always knew I wanted to be a Chef. My mum is a huge inspiration and I am lucky that I have been able to gain experience under some of the world’s most renowned chefs.

“I am so excited that I am now taking the helm at The Feathered Nest and putting my own stamp on the menu. The Cotswolds is a beautiful part of the world and after my first visit, I knew I wanted to make it my home.”

The Feathered Nest is enviably located in the heart of the Cotswolds in the picturesque village of Nether Westcote and boasts stunning panoramic views of the beautiful Evenlode Valley.

The gourmet bolthole also features four traditional guest rooms and a standalone dog-friendly Cottage for guests wanting to rest their heads and make a stay of it.
